I personally love arts and crafts type things, baking, and being outdoors. However-- it's all about the kiddo and I am open and willing to whatever they are interested in, and like to indulge them by matching their enthusiasm.
The most important part about being a nanny...
After safety, the most important part about being a nanny is understanding that you are being immersed into a family.
The families you work with as a nanny are going to vary tremendously, and it's important to value and preserve these cultures, rules, and habits even if they are different than previous experience or seem strange to you. With that being said, nannying is the opportunity to participate in someone's family dynamic, even if only for short term, and the only way to make that meaningful is offer something unique to bring to the table. I love helping kiddos learn (reading, art, piano, etc) and I love when I'm able to excite the adult family members too (hint: like the Italian family recipe pasta sauce or my peanut butter fudge).

In school, I was part of a peer support club where I was able to mentor kids with special needs-- primarily on the autism spectrum.
I have worked full-time with adults with cognitive disabilities.
I have, and very well manage, a moderate learning disability so I am able to offer some extra empathy-- even though I am fortunate enough that it doesn't dramatically impact my life on a day to day basis, I like to be open and honest about it, especially when working with children with disabilities because it is helpful to have that sense of comradery.
