Child<br />development topics include: the physical, social, emotional, and intellectual development of infants and toddlers, conception,<br />pregnancy, prenatal care, birth defects, child abuse, child birth and the impact of an infant on a family through the use of<br />infant simulators. This course is part of the Early Childhood College Career Pathway with Three Rivers Community College.</p> <p>Middle Childhood & Exceptionalities (Formerly Child Development II) (0833)<br />Level 2 Semester 1/2 Credit<br />This course is a continuation of Early Childhood and addresses the physical, social, emotional and intellectual development of<br />children ages four to twelve. Typical and atypical development will be addressed. Students will explore various exceptional<br />children topics. Students will explore national and state special education laws and practices as well as gain experience in<br />working with preschool children and students with special needs. Instructor approval is required.<br />Prerequisite: Early Childhood</p> <p>THE PRESCHOOLER (0824)<br />Level 2 Semester 1/2 Credit<br />Students interested in the field of early childhood education would benefit from this course. This course is an extension of<br />Early Childhood and will emphasize learning the Child Development Associate competencies. Only students seriously interested<br />in interacting with young children should sign up for this course, as we will be operating our own preschool, The Beginner<br />Bobcat Preschool. Students will be responsible to create, conduct, implement, and evaluate lessons for preschool<br />students. Students will also create bulletin boards, story books, finger plays and other preschool based assignments. It will<br />be required that students arrange to make formal observations at a daycare, preschool or kindergarten setting. This course<br />is part of the Early Childhood College Career Pathway with Three Rivers Community College. Instructor approval is required.<br />Prerequisite: Early Childhood</p> <p>CULINARY ARTS I (0811)<br />Level 2 Semester 1/2 Credit<br />Students will apply basic cooking techniques to food preparation in the areas of: breakfast foods, salads, vegetables, grains,<br />sandwiches, casseroles, some basic desserts. This course begins with the study of kitchen safety and sanitation and includes<br />a focus on personal nutrition, kitchen math, lab organization, and equipment.<br />Open to grades 9-12.</p> <p>CULINARY ARTS II (0812)<br />Level 2 Semester 1/2 Credit<br />Students will apply basic and advanced cooking techniques to food preparation in the areas of stocks, soups, sauces, poultry,<br />meats, fish, and shellfish. This course begins with a review of kitchen safety and sanitation and includes a focus on menu<br />writing, food presentation with garnishing, recent topics in nutrition, and working with more advanced recipes.
